What Makes Ajisai a Hakodate Icon

Hakodate ramen is famous for its clear golden shio (salt) broth—one of Hokkaido’s three major ramen styles, alongside Sapporo miso and Asahikawa soya sauce ramen.

• Flavour: It looks light, but it’s surprisingly deep and savoury thanks to the well-crafted stock.
• Toppings: Chashu pork, a soft-boiled egg, menma (bamboo shoots), naruto, and a sprinkle of spring onions—all perfectly balanced.

• Top Tip: Try the special “Ezoris Powder” (a black pepper-based spice) on the table. It adds a lovely little kick and gives the soup a completely different character.

Huge Zangi (Hokkaido-style fried chicken)

Zangi is a must-try Hokkaido speciality. At just ¥250 each, the portions are massive! They are crispy on the outside, juicy on the inside, and pair brilliantly with the ramen broth. If you’ve got the room, definitely add a piece or two to your order.
